Coohills is a French-influenced, market-driven fare from a modern, upscale dining room, lounge & patio. Coohills menu may be French-influenced, but it's Colorado grown. Proprietor and Chef-Owner Tom Coohill' has trained with culinary masters in France, Germain, and Los Angeles. Coohills partners with local and regional farmers for fresh produce, fish, poultry, and meats. The menu focuses on the freshest food each season, including such delectably tempting offerings as fresh Crudo salads, hot-from-the-oven bread, a variety of house-made pâtés and house-cured charcuterie, and the restaurant's signature crab cakes, as well as entrees of pasta and fresh seafood, roasted game and meats and locally grown vegetables. All desserts are made in-house, including ice creams, pastries, and the famous Marjolaine. |
